These chia seed puddings are from Nutritionist Sonja McCord of ‘Be Balanced Nutrition’.
Use a medium sized wide mouth glass jar. (approx 400 -450 ml)
Add 2 ½ tbs chia seeds
¼ tsp vanilla
¼ tsp cinnamon
¼ C full fat unsweetened coconut milk
Stir vigorously with a fork until seeds are not clumped together
Cover with plastic wrap and refrigerate overnight
Topping Ideas :
½ mashed banana
Pumpkin seeds
Sunflower seeds
Walnuts
Cashews, cacao nibs
¼ C berries
Sprinkle of cinnamon
Vanilla
Cacao powder
Shredded unsweetened coconut
Sonja suggests trying it without added sweeteners, although if you feel you need some sweetener you could add a teaspoon of honey, 1tsp of real maple syrup, 1 pitted chopped date or a drop of stevia liquid.

Using a big enough glass jar ensures that the chia seeds are not packed too tightly and allows them to expand.
